The brewery’s magnificent centerpiece, St Peters Hall, dates back to approximately 1280. A significant extension, the East wing, was added in 1539, utilizing materials from the nearby Flixton Nunnery. This Nunnery was one of a dozen monastic houses granted to Cardinal Wolsey by King Henry VIII, intended to finance the construction of a school in Ipswich, Suffolk’s county town. The brewing tradition thrives today, just as it did centuries ago, with Suffolk barley carefully malted to create exceptional beers.
